Passito di primitivo, Salento Rosso IGP
This sweet dessert wine is obtained after a careful selection of Primitivo grapes (which are left to dry on the vine in the vineyards of the sunny Salento plains), an expert vinification process and proper maturation. Dark red in color with orange hues and with a fragrant and intense aroma of raisins, figs, honey, red fruit jam and spices, its taste reveals the right balance of sweetness, acidity and tannins. It is a robust dessert wine that goes well with all pastries from Puglia, especially marzipan. It is also excellent with almond biscotti. Optimum serving temperature: 14° – 16° C.

Upper Salento Plain (San Pancrazio Salentino - San Donaci), province of Brindisi, in the DOC Salice Salento zone.
The grapes are left to dry on the vine until the end of September and then harvested and placed in small wood crates. After de-stemming and crushing, the grapes undergo maceration for at least 13-15 days with light pumping at a controlled temperature. The fermentation process is blocked using the cold until the desired sugar content is achieved.
After malolactic fermentation, the wine is matured in stainless steel tanks for 8 months and in the bottle for another 6 months.
Deep red with purple nuances.
